Let’s face it, carbs are delicious. Bread, pasta, potatoes – I love them all. But lately, I’ve been feeling a little worn-down from my carb-heavy diet. Ingredients

  • 1 cup dry red lentils (soaked overnight or for at least 2 hours)

  • 1 cup water

  • 1 tsp salt

  • 1/2 tsp garlic (optional)

  • 1/2 tsp onion powder (optional)

  • 1/2 tsp ground coriander (optional)

Directions

  • Place all ingredients in a blender and blend until smooth and pourable like pancake batter (add more water if too thick)
  • Heat a large pan on medium heat
  • add a small amount of oil to the pan (about 1 tsp for each pancake)
  • cook for about 5 min on both sides or until slightly golden
  • Serve right away or refrigerate for later (can be stored in the freezer too, I would place parchment between each pancake to prevent sticking)
