Ingredients

  • For the Chicken (marinate for 1hr or overnight)
  • 2 6 oz chicken breasts, sliced

  • 2 tbsp gochujang paste

  • 2 tbsp honey or maple syrup

  • 4 tbsp soy sauce

  • 1/4 cup greek yogurt

  • 2 cloves garlic peeled and minced

  • 2 tsp minced ginger

  • 1 tbsp toasted sesame oil

  • For the slaw
  • 1 cup shredded cabbage and/or kale (or store-bought slaw mix)

  • 1 tbsp cilantro leaves

  • 1 tbsp mayo

  • 1 lime, juiced

  • 1 tbsp soy sauce

  • 1 tsp toasted sesame oil

  • To assemble
  • 1/2 english cucumber, sliced

  • 6 slider buns (store-bought or my grain-free buns)

Directions

  • Add all the marinade ingredients with the chicken to an airtight, sealed container. Put the lid on and shake to coat the chicken in the marinade. Leave in the fridge for 1hr-overnight.
  • Once the chicken is done marinating, you can place the slices evenly on the rack of your air fryer and cook for 15 min at 375. If you are using an oven, preheat at 375 and bake for 25 min.
  • While the chicken is cooking, assemble all the slaw ingredients in a medium bowl and toss to coat.
  • To assemble the sliders, place 2 cucumber slices on the bottom of the bun, 1-2 slices of chicken, and top with the slaw and the top of the bun. You may need a toothpick to hold it all together to serve.

 I’m always on the lookout for new, healthy recipes to make in my air fryer. Especially quick and easy. So when I came across this recipe for Korean chicken sliders, I knew I had to give it a try! And let me tell you, these sliders did not disappoint.

They’re packed with protein and super flavorful – plus, they’re low carb and low calorie. And best of all, they’re so easy to make! If you’re looking for a healthy, delicious recipe to make in your air fryer, definitely give these Korean chicken sliders a try!

1 lb chicken breast, sliced

If you want to have this prepped ahead, ready to go for those busy days, keep sliced chicken with the marinade in plastic bags and throw ’em in the freezer. 

When you’ve realized you have nothing planned for dinner it will be super easy to pull out, thaw and throw in the air fryer.

Variations

If you don’t have buns or want to do sliders, just add the chicken to salad or have on its own with a side of veggies and rice.

If you are dairy-free, leave out the greek yogurt. You can add mayo in its place if you want but not entirely necessary. If you want to bulk up the marinade a bit, add in some almond milk or other milk alternative and lemon or lime juice for acidity.
